Chicken and Asparagus in Creamy Parmesan Orzo
Ingredients:
1 cup orzo pasta
2 cups chicken broth
1 lb chicken breast, diced
1 cup asparagus, chopped
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 tbsp olive oil
Salt and pepper to taste
Directions:
In a pot, bring chicken broth to a boil. Add orzo and cook for about 8-10 minutes until tender. Drain and set aside.
In a skillet, heat olive oil over medium heat. Add chicken and cook until golden brown. Add asparagus and cook for 2-3 minutes.
Stir in the orzo, heavy cream, and Parmesan cheese. Season with salt and pepper. Cook for another 2-3 minutes until creamy.
Serve warm, garnished with extra Parmesan.
