Southern Green Beans & Potatoes
~~Ingredients ~~
6 slices salt pork, sliced
2 pounds green beans, washed, trimmed and snapped
2 pounds russet or red/new potatoes, unpeeled & quartered
4 tablespoons butter
1 garlic glove, minced
1/2 red onion, chopped
2 cups chicken broth
4-5 cups water (enough to cover potatoes and beans)
1/2 teaspoon all purpose seasoning
Salt to taste
Freshly Ground Pepper to taste
~~Instructions —
Cook chopped salt pork in a dutch oven over medium heat, stirring occasionally, until browned, about 8 to 10 minutes. Remove salt pork snd set aside. It isnt necessary to drain as the juices go well with the beans. Remove all grease from the dutch oven except about 3 tablespoons. Add the onion; cook over medium heat and stir until the onion is translucent, about 5 minutes. Stir in the cooked salt pork, green beans, potatoes, garlic, butter, all purpose seasoning, chicken broth
and water.
Bring to a boil over high heat, stir, cover, and simmer over low heat until green beans and potatoes are tender, about 10 minutes. Remove from heat and season with salt and freshly ground black pepper to taste.
**Note: This recipe works well with fresh green beans or canned beans.
