- Salt and freshly ground black pepper to taste
- 1 cup chopped kale, stems removed | 30 grams
- ½ cup cooked quinoa | 90 grams
- ¼ cup roasted chickpeas | 40 grams
- 2 tablespoons tahini dressing (tahini, lemon juice, water, garlic, salt) | 30 milliliters
- 1 tablespoon pumpkin seeds | 10 grams

directions:
1. Preheat oven to 400°F (200°C). Toss the cubed sweet potato with olive oil, smoked paprika, salt, and pepper. Spread in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
2. While the sweet potato is roasting, massage the chopped kale with a little olive oil and salt for a few minutes to soften it.
3. Prepare the tahini dressing by whisking together tahini, lemon juice, a little water, minced garlic (optional), and salt to taste until smooth and creamy. Add more water as needed to reach the desired consistency.
