Ingredients:
• 4 large lemons
• 1 cup water
• 1 cup sugar
• 1/2 cup freshly squeezed lemon juice
• Zest of 1 lemon
• Mint leaves for garnish (optional)
Instructions:
1. Prepare the Lemon Shells:
• Wash the lemons thoroughly.
• Cut off the top quarter of each lemon to create a lid.
• Carefully scoop out the flesh from the lemons using a spoon, leaving the shells intact. Set aside the scooped-out flesh for later use.
• Place the lemon shells in the freezer to freeze while you prepare the sorbet.
2. Make the Sorbet:
• In a saucepan, combine water and sugar. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let it cool.
• Add the freshly squeezed lemon juice and lemon zest to the sugar syrup. Stir well to combine.
• Transfer the mixture to a blender and add the reserved lemon flesh. Blend until smooth.
• Pour the lemon mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a sorbet consistency.
3. Assemble the Sorbetto di Limone:
• Remove the frozen lemon shells from the freezer.
• Using a spoon or ice cream scoop, fill each frozen lemon shell with the lemon sorbet.
• Place the sorbet-filled lemon shells back in the freezer to firm up for about 1 hour.
• Before serving, garnish with mint leaves if desired.
