Sweet Potato and Black Bean Bowls with Avocado Lime Dressing

Ingredients:
For the sweet potatoes:
2 large sweet potatoes, peeled and cubed
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
For the black beans:
1 (15 oz) can black beans, rinsed and drained
1/4 cup salsa
1/4 cup chopped cilantro
1/4 teaspoon cumin
For the avocado lime dressing:
1 avocado, ripe and diced
1/4 cup lime juice
1/4 cup cilantro, chopped
1 clove garlic, minced
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions:
Roast sweet potatoes: Preheat oven to 400°F (200°C). Toss the sweet potatoes with olive oil, salt, and pepper. Roast on a baking sheet for 20-25 minutes, or until tender.
Prepare black beans: In a bowl, combine the black beans, salsa, cilantro, and cumin.
Make avocado lime dressing: In a small bowl, combine the avocado, lime juice, cilantro, garlic, olive oil, salt, and pepper. Blend or mash until smooth.
Assemble: Divide the roasted sweet potatoes and black beans into bowls. Drizzle with the avocado lime dressing.

Tips:
For a spicier dish, use a spicier salsa or add a pinch of red pepper flakes to the sweet potatoes.
