Easy Savory Chickpea Spinach Protein Crepes: Versatile & Thin π±πͺπ
ingredients:
1 cup (120g) chickpea flour (besan/gram flour)
1 ΒΌ cups (300ml) water
1 cup (about 30g) fresh spinach, finely chopped
1 tbsp nutritional yeast (optional, for flavor)
Β½ tsp salt
ΒΌ tsp garlic powder
ΒΌ tsp black pepper
Olive oil or vegan butter for cooking
directions:
1. In a medium bowl, whisk together the chickpea flour, water, nutritional yeast (if using), salt, garlic powder, and black pepper until completely smooth. Break up any lumps.
2. Stir in the finely chopped fresh spinach.
3. Let the batter rest for at least 10-15 minutes at room temperature. This helps improve the texture of the crepes.
4. Heat a lightly oiled non-stick skillet or crepe pan over medium heat. The pan should be hot enough that a drop of water sizzles.
5. Once hot, pour about ΒΌ to β
cup of batter (depending on pan size) into the center of the pan. Immediately swirl the pan to spread the batter thinly and evenly into a large circle.
6. Cook for 2-4 minutes on the first side, until the edges start to look dry and lift away from the pan, and the surface appears set.
7. Carefully slide a thin spatula under the crepe and flip it over. Cook for another 1-2 minutes on the second side, until lightly golden.
8. Slide the finished crepe onto a plate. Repeat the process with the remaining batter, adding a tiny bit more oil to the pan between crepes if needed.
9. Serve the crepes warm. Fill or top them with savory fillings like sautΓ©ed mushrooms, hummus, avocado, salsa, or vegan cheese.
