Cream Cheese Sugar Cookies
Ingredients:
For the Cookies:
1 cup unsalted butter, softened
3 oz cream cheese, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
For the Frosting:
1/2 cup unsalted butter, softened
2 oz cream cheese, softened
3 cups powdered sugar
2–3 tablespoons milk
1/2 teaspoon vanilla extract
Pink food coloring (optional)
Directions:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy. Add egg and vanilla and mix well.
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture until a soft dough forms.
Scoop out tablespoon-sized portions and roll into balls. Flatten slightly and place on baking sheet.
Bake for 10–12 minutes or until the edges are just set. Do not overbake. Let cool completely.
For the frosting, beat butter and cream cheese until smooth. Add powdered sugar, vanilla, and milk one tablespoon at a time until desired consistency. Mix in pink food coloring if using.
Frost cooled cookies and let them set before stacking or storing.
