Cheesy Breakfast Potato Casserole
~~Ingredients~~
1 pound Ground Sausage, cooked, I like the spicy
1 medium yellow onion, diced and sautéed in sausage grease
7 large eggs, beaten
1 cup whole milk
1 (20 ounce) bag frozen Diced Hash Browns
5 tablespoons butter, melted
1 (12 oz.) bag of Cheddar Cheese, grated (use the kind you like)
Salt & Pepper, to taste
~~Instructions~~
Preheat oven to 350. Spray casserole dish with non-stick spray and set aside.Cook your sausage, take up on paper towels to absorb any excess oils. To the pan where you cooked the sausage, add your onions and sauté til translucent. Take onions up and add to your sausage.
In a large bowl, add your eggs and milk and beat with a wire whisk until fluffy. Then add your potatoes, sausage, onions, half your grated cheese, reserving half for the top and your melted butter. Season with salt and pepper to taste. Stir to combine. Pour into your prepared casserole dish.
Cover with foil and bake for 45 minutes. Remove from oven, uncover and top with the reserved cheese. Bake uncovered for an additional 10 minutes.

*Note...You can add bell peppers or any other veggies you like to this. Or, you could use either ham or bacon instead of sausage. Make it to your family likings.
