Grilled Shrimp with Garlic Herb Chimichurri

Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- ½ teaspoon smoked paprika
- Lemon wedges, for serving

For the Chimichurri Sauce:
- ½ cup fresh parsley, finely chopped
- 3 garlic cloves, minced
- ½ teaspoon red pepper flakes
- ½ teaspoon dried oregano
- 2 tablespoons red wine vinegar
- ¼ cup olive oil
- Salt and pepper, to taste

Directions
Start by preparing the chimichurri sauce. In a bowl, combine the chopped parsley, minced garlic, red pepper flakes, dried oregano, red wine vinegar, olive oil, salt, and pepper. Stir to mix well, then set aside for at least 15 minutes to allow the flavors to meld.

Next, season the shrimp by tossing them in olive oil, smoked paprika, salt, and pepper. Let the shrimp marinate for about 10–15 minutes.

Preheat your grill or grill pan to medium-high heat. Grill the shrimp for 2–3 minutes on each side, or until they turn opaque and have nice charred grill marks.

Once the shrimp are done, arrange them on a plate and generously spoon the chimichurri sauce over the top.

Serve the grilled shrimp immediately with lemon wedges for a fresh, citrusy finish.
