Maltesers Cupcakes: A Chocolate Lover's Dream
🍫 Chocolate Cupcake Ingredients:
1½ cups (180g) all-purpose flour
¾ cup (75g) unsweetened cocoa powder
1½ tsp baking powder
1 tsp baking soda
¼ tsp salt
1 cup (200g) granulated sugar
½ cup (100g) brown sugar, packed
2 large eggs
½ cup (120ml) vegetable oil
1 tsp vanilla extract
¾ cup (180ml) buttermilk (or regular milk)
½ cup (120ml) hot water or hot coffee (coffee enhances the chocolate flavor)
1 cup (about 150g) Maltesers (chopped into halves or quarters if preferred)
🍫 Malteser Buttercream Frosting:
½ cup (113g) unsalted butter, softened
2½ cups (300g) powdered sugar
1–2 tbsp heavy cream or milk
¼ cup (40g) Maltesers (finely chopped)
¼ cup (60g) cocoa powder
1 tsp vanilla extract
Pinch of salt
🍫 Optional Malteser Ganache (for extra indulgence):
½ cup (85g) semi-sweet chocolate chips
¼ cup (60ml) heavy cream
1 tbsp butter
1/3 cup (50g) Maltesers, crushed for topping
🔪 Instructions:
Step 1: Make the Chocolate Cupcakes
Preheat oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
In another bowl, beat the granulated sugar, brown sugar, eggs, oil, and vanilla extract until light and fluffy.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until smooth.
Stir in the hot water or coffee until the batter is well combined (it will be a bit thin).
Gently fold in 1 cup of chopped Maltesers.
Divide the batter evenly among the cupcake liners, filling each about ¾ full.
Bake for 18–20 minutes, or until a toothpick comes out clean. Let them cool completely on a wire rack.
Step 2: Make the Malteser Buttercream Frosting
Beat butter on medium-high speed until smooth and creamy (about 2 minutes).
Gradually add the powdered sugar, 1/4 cup at a time, mixing until smooth after each addition.
Add cocoa powder, chopped Maltesers, vanilla extract, and a pinch of salt. Beat until combined.
Add 1–2 tbsp of heavy cream or milk to adjust the frosting consistency if needed.
Beat on high for an extra minute to make it light and fluffy.
Step 3: Optional Malteser Ganache
Heat the cream until it’s just simmering, then pour it over the chocolate chips in a heatproof bowl.
Let it sit for a minute, then stir until smooth and glossy.
Add butter to the ganache and stir to combine.
Drizzle over cupcakes once they are frosted, then top with additional chopped Maltesers.
Step 4: Assemble and Serve
Frost the cooled cupcakes generously with the Malteser buttercream frosting.
Optionally drizzle with ganache and top with crushed Maltesers for extra crunch and chocolate goodness.
