1 cup (230g) unsalted butter, softened
4 large eggs
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground cloves
1 tsp vanilla extract
¼ cup (60ml) orange juice
1 tbsp orange zest
1 cup (150g) mixed dried fruits (raisins, sultanas, cranberries, cherries)
½ cup (80g) chopped nuts (almonds, walnuts, pecans)
2 tbsp flour (for coating fruits)
Optional: 2 tbsp rum or brandy for soaking fruits
Preparation Steps
Preheat oven to 320°F (160°C). Grease and line a loaf pan with parchment paper.
Cream butter and brown sugar until smooth and fluffy. Beat in eggs one by one. Mix in vanilla extract, orange juice, and zest.
In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
Toss dried fruits and nuts with 2 tbsp flour to prevent sinking.
Combine wet and dry mixtures until just blended, then fold in fruits and nuts.
Spread batter into the loaf pan and smooth the top.
Bake for 60–75 minutes, or until golden brown and a toothpick comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack.
