🥬 Garbure (Cabbage & Bean Soup) 🥣🥓
A rustic Pyrenean soup of cabbage, beans, and ham — warming and hearty.
Ingredients:
• 300 g cabbage
• 200 g white beans (soaked overnight)
• 200 g ham or smoked pork
• 2 carrots
• 1 leek
• 1 bay leaf
Instructions:
1️⃣ In a large pot, sauté ham, carrots, and leek.
2️⃣ Add soaked beans, cabbage, bay leaf, and enough water to cover.
3️⃣ Bring to boil, then reduce to simmer.
4️⃣ Cook for 1.5–2 hours until beans are tender.
5️⃣ Adjust seasoning with salt & pepper.
6️⃣ Serve hot with country bread.
