Keto Cinnamon Swirl Bread (≈3g net carbs per slice)

Ingredients (loaf, about 12 slices)

Bread batter:

2 cups almond flour

¼ cup coconut flour

¼ cup whey protein isolate (or more almond flour)

½ cup erythritol or monk fruit sweetener

1 tbsp baking powder

½ tsp salt

5 large eggs

½ cup sour cream (or Greek yogurt, unsweetened)

⅓ cup melted butter or coconut oil

2 tsp vanilla extract

Cinnamon swirl:

2 tbsp cinnamon

¼ cup erythritol

2 tbsp melted butter

Instructions

Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment.

In one bowl, whisk almond flour, coconut flour, protein powder, baking powder, sweetener, and salt.

In another bowl, whisk eggs, sour cream, butter, and vanilla. Combine wet and dry ingredients to form a thick batter.

Pour half the batter into the loaf pan. Drizzle half the cinnamon swirl mixture over it. Swirl with a knife. Add the rest of the batter and repeat with remaining swirl.

Bake for 40–45 minutes, until a toothpick comes out clean.

Cool before slicing. Sprinkle extra erythritol on top for a “sugar” sparkle look.
