Skillet Baked Eggs with Sausage and Cheese
Ingredients:
1 lb (450g) breakfast sausage (mild or spicy, crumbled or in small patties)
6 large eggs
1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)
1/2 cup diced onion (optional)
1/2 tsp garlic powder
1/2 tsp smoked paprika (optional)
Salt and black pepper to taste
Fresh parsley, chopped for garnish
1 tbsp olive oil or butter
Instructions:
Preheat oven: Set your oven to 375°F (190°C).
Cook the sausage: In a large oven-safe skillet (cast iron preferred), heat olive oil or butter over medium heat. Add sausage and cook until browned and cooked through, breaking into bite-sized pieces if using bulk sausage. Remove sausage from skillet and set aside, leaving some fat in the pan.
Sauté onions (optional): Add diced onion to the skillet and cook for 3-4 minutes until softened.
Combine sausage and onions: Return cooked sausage to the skillet and mix with onions. Sprinkle garlic powder, smoked paprika, salt, and pepper over the mixture.
Add cheese: Evenly sprinkle shredded cheese over the sausage mixture in the skillet.
Add eggs: Carefully crack the eggs on top of the cheese and sausage mixture, spacing them evenly.
Bake: Transfer the skillet to the preheated oven and bake for about 10-15 minutes, or until the egg whites are set but yolks are still slightly runny (or cook longer for firmer yolks).
Garnish and serve: Remove from oven, sprinkle with fresh chopped parsley, and add more black pepper if desired.
Serve: Enjoy directly from the skillet with toast, crusty bread, or fresh salad.
