Ingredients:
- 1 cup (170g) chickpeas, cooked and drained
- 1 cup (180g) green lentils, cooked and drained
- Β½ cup (50g) breadcrumbs (gluten-free if needed)
- ΒΌ cup (60ml) olive oil
- 2 tablespoons soy sauce or tamari
- 2 tablespoons nutritional yeast
- 2 cloves garlic, minced
- 1 tablespoon smoked paprika
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- Β½ teaspoon chili powder
- Salt and black pepper to taste
Directions:
1. In a large mixing bowl, mash cooked chickpeas and lentils with a fork or potato masher, leaving some texture.
2. Add breadcrumbs, olive oil, soy sauce, nutritional yeast, minced garlic, smoked paprika, cumin powder, coriander powder, chili powder, salt, and black pepper to the bowl. Mix well until everything is thoroughly combined.
3. Form the mixture into sausage shapes, either patties or links.
4. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
5. Cook sausages for about 4-5 minutes per side, or until golden brown and heated through.
6. Serve hot in buns, with mashed potatoes, or as a side dish.
