5 Layer Cookie Box Brownie Cheesecake
Ingredients:
- 16 oz chocolate chip cookie dough, room temperature
- 36 oz brownie mix, 2 boxes, batter prepared according to package instructions
- 24 oz cream cheese, softened
- ½ cup sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 40 double-stuffed chocolate cookie sandwiches
- Whipped cream, for serving
Directions:
1. Preheat oven to 325°F (163°C). Grease and line a 9x13 inch baking pan with parchment paper, allowing overhang for easy removal.
2. Press the chocolate chip cookie dough evenly into the bottom of the prepared pan to form the first layer.
3. In a large bowl, beat together the softened cream cheese, sugar, vanilla extract, and egg until smooth and creamy.
4. Pour the cream cheese mixture over the cookie dough layer and spread evenly.
5. Arrange the double-stuffed chocolate cookie sandwiches in a single layer over the cream cheese mixture.
6. Pour the brownie batter evenly over the cookie sandwich layer, spreading to cover completely.
7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
8. Remove from oven and allow to cool completely in the pan on a wire rack.
9. Once cooled, refrigerate for at least 4 hours or overnight to set before slicing.
10. Serve topped with whipped cream.
