1 cup (2 sticks) unsalted butter, softened
¾ cup granulated sugar
¾ cup packed brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 ½ cups white chocolate chips
Instructions:
Preheat and prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Cream the butter and sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 2–3 minutes.
Add wet ingredients: Beat in the egg and vanilla extract until fully incorporated.
Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
Fold in the chips: Gently stir in the white chocolate chips using a spatula or wooden spoon.
Scoop and bake: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 8–10 minutes, or until the edges are lightly golden but the centers are still soft. The cookies will continue to set as they cool.
