Grilled Chicken with Lemon Capers Pasta
Zesty Lemon Caper Chicken Pasta Delight
Ingredients:
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 teaspoon garlic powder
Salt and freshly ground black pepper to taste
8 oz (225g) linguine or spaghetti
2 tablespoons olive oil (for the sauce)
3 garlic cloves, minced
1/4 cup fresh lemon juice (about 2 lemons)
2 teaspoons lemon zest
2 tablespoons capers, drained
1/4 cup low-sodium chicken broth
1/4 cup chopped fresh parsley
Optional: chili flakes for heat
Directions:
Season chicken breasts with garlic powder, salt, and pepper.
Heat 1 tablespoon olive oil in a grill pan over medium heat. Grill chicken for 6–7 minutes per side or until fully cooked and internal temperature reaches 165°F (74°C). Let it rest, then slice thinly.
Cook pasta according to package instructions. Drain and reserve 1/4 cup pasta water.
In a large skillet, heat 2 tablespoons olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
Add lemon juice, zest, capers, and chicken broth. Let simmer for 2 minutes.
Toss in cooked pasta and add reserved pasta water if needed to loosen sauce.
Add sliced grilled chicken and chopped parsley. Mix well.
Optional: Sprinkle with chili flakes for an extra kick. Serve warm.
