Ingredients:
For the salmon:
2 salmon fillets (skin on)
2 tablespoons olive oil
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (for garnish)
1 lemon (sliced, for garnish)
For the shrimp:
1 lb large shrimp (peeled and deveined)
1 tablespoon olive oil
3 tablespoons unsalted butter
4 cloves garlic (minced)
1 teaspoon paprika
1 teaspoon lemon zest
1 tablespoon lemon juice
Salt and pepper, to taste
Fresh parsley (for garnish)
For the garlic butter sauce:
3 tablespoons unsalted butter
1/2 cup chicken broth or white wine
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped
Salt and pepper, to taste
Instructions:
Step 1: Cook the salmon
Preheat the oven to 400°F (200°C).
Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat.
Season the salmon fillets with salt and pepper on both sides.
Once the skillet is hot, place the salmon fillets skin-side down and cook for about 4-5 minutes until the skin is crispy and golden.
Flip the salmon and transfer the skillet to the preheated oven. Bake for 7-10 minutes or until the salmon is cooked through and flakes easily with a fork. Remove from the oven and set aside.
Step 2: Cook the shrimp
While the salmon is baking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the shrimp to the skillet and season with paprika, salt, and pepper. Cook for 1-2 minutes per side, or until the shrimp turn pink and opaque.
Remove the shrimp from the skillet and set aside.
Step 3: Make the garlic butter sauce
In the same skillet, melt 3 tablespoons of butter over medium heat.
Add the minced garlic and sauté for about 30 seconds, or until fragrant.
Add the chicken broth or white wine, lemon juice, and a pinch of salt and pepper. Stir well and cook for another 2-3 minutes to reduce the sauce slightly.
Add the shrimp back to the skillet and toss them in the sauce to coat.
Step 4: Combine and serve
Place the cooked salmon fillets on serving plates.
Spoon the garlic butter shrimp around the salmon.
Drizzle any remaining garlic butter sauce over the shrimp and salmon.
Garnish with fresh parsley and lemon slices.
