🍤 Sautéed Garlic Butter Shrimp
1 lb large shrimp, peeled and deveined
3 tbsp butter 🧈
4 cloves garlic, minced 🧄
1 tbsp lemon juice 🍋
Pinch of red pepper flakes (optional)
Salt & freshly cracked black pepper to taste

1 head of broccoli, cut into florets
1 tbsp olive oil
2 cloves garlic, minced
Salt & freshly cracked black pepper to taste
🥔 Creamy Mashed Potatoes
2 medium Yukon Gold potatoes, peeled and cubed
2 cloves garlic, minced
2 tbsp butter 🧈
¼ cup milk or heavy cream
2 tbsp grated Parmesan cheese 🧀 (optional)
Salt & freshly cracked black pepper to taste

Instructions
1. Prepare the Roasted Broccoli
Preheat oven to 400°F (200°C).
Toss broccoli florets with olive oil, minced garlic, salt, and pepper on a baking sheet.
Roast for 15-20 minutes, or until tender-crisp and lightly browned.
2. Prepare the Mashed Potatoes
Place cubed potatoes and minced garlic in a saucepan. Cover with cold water and bring to a boil.
Reduce heat and simmer until potatoes are very tender, about 15-20 minutes.
Drain well and return potatoes and garlic to the saucepan.
Add butter and mash until smooth. Stir in milk or heavy cream and Parmesan cheese (if using). Season with salt and pepper. Keep warm.
3. Sauté the Garlic Butter Shrimp
While the broccoli roasts and potatoes cook, melt butter in a large skillet over medium heat.
Add minced garlic and red pepper flakes (if using) and sauté until fragrant, about 30 seconds.
Add shrimp and cook for 2-3 minutes per side, or until pink and cooked through.
Stir in lemon juice and season with salt and pepper.
4. Assemble the Bowls
Divide the creamy mashed potatoes between two bowls.
Arrange the roasted broccoli florets on one side of the potatoes.
Spoon the garlic butter shrimp over the mashed potatoes and broccoli.
Drizzle any remaining garlic butter sauce from the skillet over the shrimp and vegetables.
