🍗 For the chicken & sauce:
Chicken breast
Olive oil
Garlic powder
Mushrooms (sliced)
Butter
Heavy cream
Parmesan
Salt & black pepper
Fresh parsley
🥔 For the potatoes:
Baby potatoes
Olive oil
Salt & pepper
Fresh herbs for garnish
🌿 For the spinach:
Fresh spinach
Garlic (minced)
Olive oil
Lemon juice
Salt & pepper
Instructions:
Roast halved baby potatoes in olive oil with salt and pepper until golden and crispy; sauté garlic in olive oil, add fresh spinach, season, and cook until wilted with a splash of lemon juice; season and sear the chicken until cooked through, then remove from pan; in the same skillet, cook mushrooms in butter, stir in cream and Parmesan, season, and let it thicken into a creamy sauce; return the chicken to the pan to soak up the flavors; serve everything together and garnish with fresh parsley.
Notes & Variations:
You can swap spinach for kale or Swiss chard, or add a touch of Dijon mustard to the sauce for extra zing.
