This Balsamic Lentil Salad is Quick, Easy, and Delicious! ✨🥗
ingredients:
1 and 1/2 cups (270g) cooked brown or green lentils (from about 3/4 cup dry)
1 cup (150g) chopped cucumber
1 cup (150g) cherry tomatoes, halved or quartered
1/2 cup (60g) finely chopped red onion
1/4 cup (10g) chopped fresh parsley
For the Balsamic Dressing:
1/4 cup (60ml) olive oil
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced (optional)
Salt and black pepper to taste
directions:
In a large bowl, combine the cooked lentils, chopped cucumber, cherry tomatoes, chopped red onion, and fresh parsley.
In a small bowl or jar, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic (if using), salt, and pepper until well combined.
Pour the dressing over the lentil and vegetable mixture.
Toss gently to coat everything evenly with the dressing.
Taste and adjust seasoning if needed.
Serve immediately, or chill for at least 15-20 minutes to allow the flavors to meld. This salad can be made ahead of time and stored in the refrigerator for a few days.
