Get into the spooky spirit with these Halloween-themed Whoopie Pies! Soft chocolate cookies are sandwiched together with a creamy filling, decorated with festive colors for a fun and delicious treat.
Ingredients:
For the Chocolate Whoopie Pies:
2 cups all-purpose flour
½ cup cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup buttermilk
For the Filling:
1 cup unsalted butter, softened
2 ½ cups powdered sugar
2 tablespoons heavy cream
1 teaspoon vanilla extract
Food coloring (orange, purple, green – or your favorite Halloween colors)
Halloween sprinkles for decorating (optional)
Directions:
Prepare the Whoopie Pie Batter:
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
In a large bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the egg and vanilla extract, mixing well.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until the batter is smooth and fully combined.
Bake the Whoopie Pies:
Drop rounded tablespoons of batter onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the cookies are set and slightly springy to the touch. Let them cool completely on wire racks.
Prepare the Filling:
In a large bowl, beat the softened butter until smooth. Gradually add the powdered sugar, heavy cream, and vanilla extract, mixing until light and fluffy.
Divide the frosting into separate bowls and color each with your chosen Halloween food colors (orange, purple, green, etc.).
Assemble the Whoopie Pies:
Once the cookies are completely cool, spread or pipe a generous amount of frosting onto the flat side of half the cookies. Top with the remaining cookies to create sandwiches.
Decorate and Serve:
Decorate the edges of the whoopie pies with Halloween-themed sprinkles for a festive touch, if desired.
Serve and enjoy these spooky, sweet treats!
