Ingredients:
1 lb large sea scallops
2 tbsp unsalted butter
2 tbsp olive oil
3 cloves garlic, minced
1/4 cup dry white wine (optional)
1 tbsp fresh lemon juice
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Instructions:
Prepare the Scallops: Pat the scallops dry with paper towels to remove any excess moisture (this ensures a nice sear). Season both sides with salt and pepper.
Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. When the oil is hot, carefully place the scallops in the pan, leaving space between each one. Sear for 2-3 minutes on the first side without moving them.
Flip and Sear: Flip the scallops and sear for another 2-3 minutes on the other side until golden brown and cooked through. The scallops should be opaque in the center. Remove them from the skillet and set aside.
Make the Garlic Butter Sauce: In the same skillet, add the butter and minced garlic. Sauté for 1 minute until fragrant. If using, pour in the white wine and let it simmer for 1-2 minutes until slightly reduced. Stir in the lemon juice and season with a little salt and pepper.
Serve: Return the seared scallops to the skillet and spoon the garlic butter sauce over them. Garnish with fresh parsley and serve with lemon wedges.
