🍊🍒 Cranberry-Orange Sour Cream Scones 🍒🍊
I made a batch for brunch, and they disappeared in no time! Soft, flaky, and just the right amount of sweetness. 😍
Ingredients:
2 cups all-purpose flour
1/3 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup cold unsalted butter, cubed
1/2 cup dried cranberries (or fresh if preferred)
1 tbsp orange zest
1/2 cup sour cream
1/4 cup orange juice
1 large egg
1 tsp vanilla extract
Optional Glaze:
1/2 cup powdered sugar
1-2 tbsp orange juice
1/2 tsp orange zest
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Stir in the cranberries and orange zest until evenly distributed.
In a separate bowl, whisk together the sour cream, orange juice, egg, and vanilla extract until smooth.
Add the wet ingredients to the dry ingredients, stirring until just combined. The dough will be slightly sticky.
Turn the dough out onto a lightly floured surface and knead gently just until it comes together. Pat the dough into a circle about 1 inch thick. Cut into 8 wedges and place them on the prepared baking sheet.
Bake for 12-15 minutes, or until the scones are lightly golden. Let them cool slightly on a wire rack.
For the glaze, whisk together the powdered sugar, orange juice, and orange zest until smooth. Drizzle over the warm scones.
