🍫 Vegan Biscuit Cake 🍫
Indulge in this decadent Vegan Biscuit Cake, inspired by the classic chocolate biscuit cake loved by Queen Elizabeth II. This plant-based version is rich, chocolatey, and perfect for any occasion!
Ingredients
Cake:
500g vegan Digestive biscuits 🍪
250g vegan butter 🧈
220g golden syrup 🍯
50g cocoa powder 🍫
120g dark chocolate, chopped 🍫
160ml plant milk (or brewed coffee) 🥛
½ tsp sea salt 🧂
Ganache:
150g dark chocolate, chopped 🍫
100ml plant milk 🥛
40g vegan butter 🧈
Directions
1️⃣ Prepare the Tin: Grease an 8-inch loose-bottom cake tin and line it with parchment paper.
2️⃣ Crush the Biscuits: Break the vegan Digestive biscuits into 1-2cm pieces, ensuring each biscuit is crushed into at least 6-8 smaller chunks.
3️⃣ Melt the Butter: Place the vegan butter in a pot on the stove and melt it over medium-low heat, stirring until fully melted.
4️⃣ Combine Ingredients: Add the chopped chocolate, golden syrup, and sea salt to the pot, stirring until the chocolate is melted and the mixture is well combined. Turn off the heat.
5️⃣ Mix Cocoa Paste: In a separate bowl, mix the cocoa powder with the plant milk (or brewed coffee) until it forms a thick paste. Add this to the chocolate mixture and stir until fully incorporated.
6️⃣ Add Biscuits: Gently fold in the crushed biscuits, ensuring they are all coated in the chocolate mixture.
7️⃣ Set the Cake: Pour the mixture into the lined cake tin, pressing it down to eliminate air gaps and smooth the top. Refrigerate for 2 hours to set.
8️⃣ Prepare the Ganache: While the cake sets, heat the plant milk and vegan butter in a pot over low heat until the milk is steamy and the butter is melted.
9️⃣ Melt the Chocolate: Pour the hot milk mixture over the chopped chocolate in a bowl and let it sit for 2 minutes. Stir until the ganache is smooth.
🔟 Finish the Cake: Remove the cake from the fridge. If using a loose-bottom tin, warm the sides with a blowtorch or warm towel to release the cake. If using a spring-form pan, open it and place the cake on a plate.
