• 3 medium cucumbers, peeled and sliced
• 1 medium onion, sliced into rings
• 3 medium tomatoes, cut into wedges
• 1/2 cup vinegar
• 1/4 cup sugar
• 1 cup water
• 2 tsp salt
• 1 tsp black pepper
• 1/4 cup oil
• 1 tsp chopped fresh mint (optional)
👉 Slice cucumbers, onions, and tomatoes, then toss them in a bowl. In a separate bowl, mix vinegar, sugar, water, salt, pepper, and oil until the sugar dissolves. Pour the marinade over the veggies, give it a good toss, and let it chill in the fridge for at least 2 hours (overnight for extra flavor!).
