Ingredients:
- 8 oz pasta of your choice (gluten-free if needed) (225g)
- 1 tablespoon olive oil
- 8 oz cremini mushrooms, sliced (225g)
- 2 cloves garlic, minced
- 1 cup cooked green or brown lentils (200g)
- 1 cup vegetable broth (240ml)
- 1/2 cup vegan cream cheese or cashew cream (120g)
- 1/4 cup nutritional yeast
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish

Directions:
1. Cook pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
2. While pasta is cooking, heat olive oil in a large skillet over medium heat. Add mushrooms and cook until browned and softened, about 8-10 minutes. Add garlic and cook for another minute until fragrant.
3. Stir in cooked lentils, vegetable broth, vegan cream cheese, nutritional yeast, and thyme. Season with salt and black pepper to taste. Simmer for 5-7 minutes, allowing the sauce to thicken slightly.
4. Add the cooked pasta to the skillet with the sauce. Toss to combine, adding a little reserved pasta water if needed to reach desired creaminess.
5. Serve hot, garnished with fresh parsley.
