My mother made escarole soup with cannellini beans , escarole and sweet Italian sausage. I brought some home , I added some small bow tie pasta and of course topped it with some locatelli grated cheese . It was delicious!
Sweet or hot sausage cut up bite size or crumbled pieces ( we used sweet)
A bunch of Escarole
2 cans of cannellini beans
2/3 tablespoons tomato sauce
1 big container chicken broth
Fresh garlic
Salt and pepper
Red pepper (optional)
In a big pot cook sausage when done remove it n set aside . Drain most oil and reserve some , in same pot saute 2 cloves of garlic for a minute or two. Then add your cut up pieces of escarole . Add big container of chicken brother , then two table spoons of sauce and put in your salt and pepper and little red pepper for a little kick . Let it cook for about 30 mins. Then add your beans and let it cook for another 20 minutes or so. Make sure the ingredients are covered in the chicken broth if it’s not add more broth or you may add little bit of water not too much don’t want to lose the flavor. Enjoy
