Fudgy Black Forest Brownies

Ingredients:

- 1 cup unsalted butter
- 8 oz dark chocolate, chopped
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 cup pitted cherries, chopped (fresh or frozen, thawed)
- 1/2 cup chopped dark chocolate or chocolate chips
- 1/4 cup chopped walnuts or pecans (optional)
- 1/2 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
- Extra cherries for garnish

Directions:

1. Preheat oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper or grease it well.
2. In a heatproof bowl set over simmering water, melt the butter and chopped dark chocolate together, stirring until smooth. Remove from heat and let cool slightly.
3. In a large bowl, whisk together the sugar, eggs, and vanilla extract until smooth and creamy.
4. Gradually add the melted chocolate mixture to the egg mixture, stirring to combine.
5. Sift together the flour, cocoa powder, and salt. Gently fold the dry ingredients into the wet ingredients just until combined, being careful not to overmix.
6. Fold in the chopped cherries, chocolate chips, and nuts if using.
7. Pour the batter into the prepared pan and spread evenly.
8. Bake for 25-30 minutes until the edges are set but the center is still fudgy. A toothpick inserted should come out with moist crumbs.
9. While brownies bake, whip the heavy whipping cream with powdered sugar and vanilla extract until soft peaks form.
10. Let brownies cool completely in the pan before spreading the whipped cream over the top.
11. Garnish with extra cherries and chocolate shavings if desired. Cut into squares and serve.
