Ingredients:
- 4 large flour tortillas
- 2 cups shredded mozzarella cheese
- 1 cup pepperoni slices
- 1/2 cup marinara sauce (plus extra for dipping)
- 1 tablespoon chopped fresh parsley
- 1 tablespoon olive oil or butter
Preparation Steps:
1. Heat a large skillet over medium heat and add olive oil or butter.
2. Place one tortilla in the skillet and sprinkle 1/2 cup of mozzarella cheese evenly over half of the tortilla.
3. Add 1/4 cup pepperoni slices on top of the cheese.
4. Fold the tortilla in half over the filling and cook for 2-3 minutes until the bottom is golden and crispy.
5. Flip the quesadilla and cook for another 2-3 minutes until the cheese is melted and the other side is golden.
6. Remove from the skillet and repeat with the remaining tortillas and ingredients.
7. Slice each quesadilla into wedges and sprinkle with chopped parsley.
8. Serve warm with marinara sauce on the side for dipping.
