Potsticker Noodle Bowl (with Ground Beef Substitute)
Ingredients:
8 oz Lo Mein noodles
1 tbsp peanut oil
1 lb ground beef (replacing pork)
1/4 cup chopped green onions
1/2 cup chicken broth
3 tbsp chicken broth (replacing Mirin, for a non-alcoholic substitute)
2 tbsp dark soy sauce
1 tbsp minced garlic
2 tsp grated ginger
1 tsp sesame oil
1/2 tsp sriracha hot sauce (adjust to taste)
4 cups coleslaw mix
Directions:
Cook the Lo Mein noodles according to package instructions. Drain and set aside.
Heat peanut oil in a large skillet or wok over medium-high heat.
Add the ground beef and cook, breaking it apart with a spatula, until fully browned. Drain any excess fat if needed.
Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
Add the green onions and coleslaw mix to the skillet. Stir-fry for 3-4 minutes until the cabbage is slightly wilted.
In a small bowl, mix together chicken broth, dark soy sauce, sesame oil, sriracha hot sauce, and the extra 3 tbsp of chicken broth used in place of Mirin.
Pour the sauce mixture into the skillet. Stir everything to combine and let it simmer for 3-5 minutes, allowing the flavors to meld.
Add the cooked noodles to the skillet, toss well to coat with the sauce, and heat through for another 2 minutes.
Serve warm, garnished with additional green onions if desired.
