Muffins That Taste Like Doughnuts
Ingredients:
For the muffins:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1 large egg
1/2 cup milk
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon vanilla extract
For the topping:
1/4 cup unsalted butter, melted
1/2 cup granulated sugar
1 teaspoon ground cinnamon
Directions:
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
In a bowl, cream together the butter and sugar until light and fluffy. Add the egg and mix until smooth.
Stir in milk and vanilla extract.
In a separate bowl, whisk together flour, baking powder, salt, and nutmeg. Gradually add to wet ingredients, mixing just until combined.
Divide batter evenly among muffin cups, filling each about 2/3 full.
Bake for 15–18 minutes or until a toothpick inserted comes out clean.
While still warm, dip muffin tops in melted butter and then roll in the cinnamon sugar mixture until fully coated.
Let cool slightly and enjoy warm for best flavor.
