Classic Fairy Cakes π§β¨
These Fairy Cakes are a traditional British treat. Their soft sponge texture, light sweetness, and a simple icing on top make them a charming addition to any tea party or gathering. Theyβre easy to make and always a crowd-pleaser!
π Ingredients:
π§ Unsalted butter: 100g, softened
π Caster sugar: 100g
π₯ Eggs: 2 large
π§Ά Self-raising flour: 100g

π¬ Icing sugar: 150g (for the icing)
π§ Butter: 25g, melted (for the icing)

π΄ Method:
Preheat the oven:
π§βπ³ Preheat your oven to 180Β°C (160Β°C fan) or 350Β°F. Line a 12-cup muffin tin with paper cupcake cases.
Make the cake batter:
π§ In a large mixing bowl, beat together the softened butter and caster sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
π§Ά Sift in the self-raising flour and fold it into the mixture gently. Add the milk to loosen the batter, mixing until smooth.
Bake the cakes:
π° Spoon the batter evenly into the cupcake cases, filling each about two-thirds full.
Pop the tray into the oven and bake for 12-15 minutes, or until the cakes are golden and a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool completely on a wire rack.
Make the icing:
π¬ Once the cakes are cool, make the icing by mixing the icing sugar with the melted butter and a little water (about 1-2 teaspoons), until smooth and spreadable.
Assemble the cakes:
π§ If you like, slice a small hole in the centre of each cake and add a teaspoon of jam before spooning the icing on top. Otherwise, just spread the icing directly over each cake.
Decorate:
