Spicy Cajun Shrimp & Zucchini Noodles

Ingredients:

1 pound large shrimp, peeled and deveined
2 medium zucchini, spiralized or julienned into noodles
1 red bell pepper, thinly sliced
1/2 red onion, thinly sliced
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon Cajun seasoning (or more, to taste)
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (or more, to taste)
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup dry white wine (optional)
2 tablespoons lemon juice
2 tablespoons chopped fresh parsley, for garnish

Instructions:

1. Pat the shrimp dry with paper towels. This helps them brown better. Season the shrimp generously with about 1/2 teaspoon of the Cajun seasoning, salt, and pepper. Set aside.
2. Heat the olive oil in a large skillet or wok over medium-high heat. Add the red bell pepper and red onion and cook for 3-4 minutes, or until slightly softened.
3. Add the minced garlic and cook for another minute, until fragrant. Be careful not to burn the garlic.
4. Stir in the remaining Cajun seasoning, smoked paprika, and cayenne pepper. Cook for 30 seconds, stirring constantly, to toast the spices and release their aroma.
5. Add the zucchini noodles to the skillet and cook for 2-3 minutes, stirring occasionally, until slightly softened but still firm.
6. If using white wine, pour it into the skillet and let it cook for a minute, allowing some of the alcohol to evaporate.
7. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Don't overcrowd the pan; you may need to cook the shrimp in batches if necessary.
8. Stir in the lemon juice and cook for another minute to combine all the flavors.
9. Garnish with chopped fresh parsley and serve immediately. This dish is best enjoyed hot.
