Elizabeth Taylor's chicken steamed in wine
serves 6.
3 lbs broiler-fryer chickens, cut into pieces
4 tablespoons olive oil
1 small onion, sliced
1 clove garlic, minced
2 bay leaves
2 tablespoons fresh parsley, minced
1/4 teaspoon salt
2 dashes black pepper
1 cup dry sauterne wine*
1. Flour chicken lightly and brown in a heavy skillet or Dutch oven.
2. Combine all the other ingredients and pour over the chicken.
3. Cover and simmer for about an hour, or until tender.
*Sauternes is a French sweet wine, so any sweet white wine or dessert wine can be used.
