Coconut Cream Cheese Cookies 🍪🥥🧀
Ingredients:
2 cups + 3 tbsp all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
12 tbsp (1.5 sticks) unsalted butter, melted & cooled
5–6 oz cream cheese, softened
1 cup packed brown sugar
1/2 cup granulated sugar
2 tsp vanilla extract
2 cups toasted coconut
Directions:
In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
In a large mixing bowl, combine melted butter, cream cheese, brown sugar, and granulated sugar. Beat until smooth and creamy.
Add vanilla extract and mix to incorporate.
Gradually stir in the dry ingredients until just combined.
Fold in the toasted coconut evenly throughout the dough.
Cover and chill the dough for at least 1 hour.
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Scoop tablespoon-sized portions of dough and roll into balls. Place 2 inches apart on the prepared baking sheets.
Bake for 10–12 minutes, or until the edges are lightly golden.
Let cookies cool on the sheet for 5 minutes before transferring to a wire rack.
