Shrimp-Stuffed Salmon with Garlic Mashed Potatoes and Roasted Asparagus
Ingredients:
For the Shrimp-Stuffed Salmon:
- 2 salmon fillets, skinless
- 1/2 pound shrimp, peeled and deveined
- 4 ounces cream cheese, softened
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon grated Parmesan cheese
- 1/4 cup fresh spinach, chopped
- 1 garlic clove, minced
- 1 teaspoon Cajun seasoning or Old Bay seasoning
- 1 tablespoon olive oil
- Salt and black pepper to taste
For the Garlic Mashed Potatoes:
- 3 large potatoes, peeled and cubed
- 3 tablespoons butter
- 1/2 cup milk or cream
- 2 garlic cloves, minced or roasted
- Salt and pepper to taste
For the Roasted Asparagus:
- 1 bunch asparagus, trimmed
- 1 tablespoon olive oil
- Salt, pepper, and garlic powder to taste
Directions:
1. Start by making the mashed potatoes. Boil the peeled and cubed potatoes in salted water until they are fork-tender. Drain and mash them with butter, milk, minced garlic, salt, and pepper. Set them aside.
2. For the shrimp filling, combine the softened cream cheese, shredded mozzarella, Parmesan cheese, chopped spinach, minced garlic, and half of the shrimp (either raw or cooked) in a bowl. Season the mixture with Cajun seasoning, salt, and pepper to taste.
3. To stuff the salmon, carefully cut a pocket in the thickest part of each fillet. Stuff each pocket with the shrimp mixture, packing it in generously. Season the outside of the salmon with the remaining seasoning.
4. Heat olive oil in a skillet over medium heat. Place the stuffed salmon fillets in the pan and sear for 3–4 minutes on each side, or until the salmon is golden brown and cooked through. Optionally, you can finish cooking in a preheated oven at 375°F (190°C) for 5–7 minutes to ensure the salmon is fully cooked.
5. To roast the asparagus, toss the trimmed asparagus with olive oil, salt, pepper, and garlic powder. Roast in the oven at 400°F (205°C) for 12–15 minutes, or until tender and lightly crispy.
6. To serve, plate the garlic mashed potatoes first, then place the shrimp-stuffed salmon on top. Add a side of roasted asparagus. If desired, drizzle with butter or pan juices for extra flavor.
