Easy Shepherd’s Pie
So hearty and satisfying! I make this when we need something cozy and filling. That creamy mash on top is everything!
Ingredients:
1 lb (450g) ground beef or lamb
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1 cup frozen peas and carrots
1/2 cup corn kernels
2 tbsp tomato paste
2 tbsp flour
1 cup beef broth
1 tsp Worcestershire sauce
Salt and pepper to taste
Mashed Potato Topping:
4 cups mashed potatoes (about 3–4 potatoes)
1/4 cup milk
2 tbsp butter
Salt to taste
Optional: shredded cheese on top
Directions:
1. Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until softened.
2. Add ground beef, cook until browned. Drain excess fat.
3. Stir in tomato paste, flour, broth, Worcestershire sauce, salt, and pepper. Simmer until thickened.
4. Add peas, carrots, and corn. Cook for 2–3 more minutes.
5. Spread the meat mixture into a baking dish.
6. Mix mashed potatoes with milk, butter, and salt. Spread evenly over meat.
7. Optional: sprinkle cheese on top.
8. Bake at 400°F (200°C) for 20–25 minutes or until golden on top.
9. Let cool slightly, garnish with parsley, and serve!
