Lasagna Soup
Ingredients:
1 lb ground beef or Italian sausage 🥩
1 small onion, diced 🧅
3 cloves garlic, minced 🧄
1 can (15 oz) diced tomatoes 🍅
1 can (15 oz) tomato sauce 🍅
4 cups beef broth 🥣
1 tsp Italian seasoning 🌿
Salt & pepper to taste 🧂
8 lasagna noodles, broken into pieces 🍝
Optional toppings: shredded mozzarella, ricotta, fresh basil 🧀🌿
Directions:
1. In a large pot, brown the ground meat with diced onion until cooked. Drain any excess fat.
2. Add garlic and cook for 1 minute.
3. Stir in diced tomatoes, tomato sauce, broth, Italian seasoning, salt, and pepper. Bring to a boil.
4. Add the broken lasagna noodles. Reduce heat and simmer for 15–20 minutes or until noodles are tender.
5. Serve hot, topped with a spoonful of ricotta and a sprinkle of mozzarella and basil if desired!
