Peach Cobbler Muffins

Ingredients:
- 2 cups all-purpose flour plus 1 tablespoon more
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 eggs
- 1/4 cup salted butter, melted and cooled
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 2 tablespoons peach juice from canned peaches
- 2 (15-ounce) cans of peaches in juice
For the Streusel Topping:
- 1/4 cup salted butter, cold and cut into cubes
- 1/3 cup all-purpose flour
- 1/3 cup granulated sugar
Directions:
1. Start by preheating your oven to 425°F. Prepare a 12-cup muffin pan by lining it with cupcake liners or spraying it with nonstick cooking spray.
2. In a small bowl, sift together the flour, salt, and baking powder; set this mixture aside.
3. In a large mixing bowl, combine the eggs, melted butter, sugar, vanilla extract, milk, and peach juice. Whisk or beat these ingredients together until well combined.
4. Gently add the dry ingredient mixture to the wet ingredients, stirring until just combined. Be careful not to overmix.
5. Drain the canned peaches, ensuring to keep 2 tablespoons of the juice to add to your batter before discarding the rest.
6. Dice the peaches into small pieces and toss 1 cup of them with 1 tablespoon of flour, then gently fold them into the muffin batter.
7. Pour the muffin batter into the prepared muffin cups, filling each about 3/4 of the way full.
8. Top each muffin with a few pieces of diced peaches for added flavor.
9. For the streusel topping, mix together the cold cubed butter, flour, and sugar in a small bowl. Use a fork or pastry blender to create a crumbly texture.
10. Sprinkle the streusel mixture generously over the tops of the muffins.
11. Bake the muffins in the preheated oven for 6 minutes at 425°F. Then, reduce the oven temperature to 350°F and continue baking for an additional 15-18 minutes, or until a toothpick inserted into the center comes out clean.
