Shrimp Boil Foil Packets
Ingredients:
• 2 ears of corn, cut into rounds
• 1 package Cajun sausage, sliced
• 1 pound large shrimp, peeled and deveined
• 1 large onion, chopped
• 1 red bell pepper, chopped
• 1 green bell pepper, chopped
• 2 tablespoons fresh lemon juice
• 2 tablespoons minced garlic
• 2 teaspoons Old Bay seasoning
• 2 teaspoons Cajun seasoning
Instructions:
1. Preheat your grill to medium-high heat, or preheat your oven to 425°F.
2. Take 4 sheets of heavy-duty aluminum foil and double them up to make sturdy packets.
3. Divide the corn, sausage, shrimp, onion, and bell peppers evenly among the foil packets.
4. In a small bowl, mix together the lemon juice, garlic, Old Bay seasoning, and Cajun seasoning. Drizzle this mixture evenly over the ingredients in each foil packet.
5. Seal the packets tightly to keep the steam in.
6. Grill the packets over medium-high heat with the sealed side facing up for around 12-15 minutes. Alternatively, you can bake them in the oven for 15-20 minutes. Check to see if the shrimp are pink and the veggies are tender.
7. Serve the packets warm and optionally garnish with fresh cilantro. Enjoy!
