Ingredients:
For the Brownie Layers:
1 box of brownie mix (or homemade recipe of your choice)
1/2 cup water
1/4 cup vegetable oil
2 large eggs
For the Coffee Mascarpone Cream:
1 cup heavy cream
1/2 cup mascarpone cheese
1/4 cup powdered sugar
1 teaspoon vanilla extract
2 tablespoons brewed coffee (cooled)
1 tablespoon coffee liqueur (optional)
For Assembly:
2 tablespoons brewed coffee (for soaking the brownies)
Cocoa powder (for dusting)
Chocolate shavings (optional, for garnish)
Instructions:
1. Prepare the Brownie Layers:
-Preheat the oven and prepare the brownie batter according to the instructions on the box, or your preferred homemade recipe.
-Pour the batter into a greased baking pan and bake as directed. Once baked, allow the brownies to cool completely.
-After cooling, cut the brownies into bite-sized cubes for layering.
2. Make the Coffee Mascarpone Cream:
-In a large bowl, whip the heavy cream until stiff peaks form.
-Gently fold in the mascarpone cheese, powdered sugar, vanilla extract, brewed coffee, and coffee liqueur (if using) until smooth and well combined. The mixture should be light and creamy.
3. Assemble the Parfaits:
-In serving glasses or cups, layer the brownie cubes, followed by a spoonful of the coffee mascarpone cream. Repeat the layers until the glasses are filled.
-Drizzle the remaining brewed coffee over the brownie cubes to soak them slightly, infusing them with coffee flavor.
-Finish by dusting the parfaits with a light sprinkle of cocoa powder and topping with chocolate shavings for extra decadence.
4. Chill & Serve:
-Refrigerate the parfaits for at least 1 hour to allow the flavors to meld together.
