Cheesy Beef Enchilada Tortellini
Ingredients:
9 oz cheese tortellini
1 lb ground beef
1 small onion, chopped
2 cloves garlic, minced
1 tbsp chili powder
1 tsp ground cumin
1 tsp paprika
½ tsp salt
½ tsp black pepper
1 (10 oz) can enchilada sauce (red or green)
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
¼ cup sour cream
Fresh cilantro, chopped (for garnish)
Directions:
Cook the cheese tortellini according to the package instructions. Drain and set aside.
While the tortellini cooks, heat a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet with the beef. Cook for 2-3 minutes until the onion softens.
Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for another minute to toast the spices.
Pour in the enchilada sauce, and stir to combine. Let it simmer for 5 minutes to let the flavors blend together.
Add the cooked tortellini to the beef mixture, and gently toss to coat the pasta in the sauce.
Sprinkle the mozzarella and cheddar cheese over the top. Cover and cook on low for 2-3 minutes until the cheese is melted and bubbly.
Remove from heat and stir in the sour cream for extra creaminess.
Garnish with fresh cilantro and serve hot.
