Garlic Butter Steak Bites and Potatoes
Tender Steak Bites with Garlic Butter and Crispy Potatoes
Ingredients:
1 1/2 lbs steak, cut into bite-sized pieces (sirloin, ribeye, or strip steak)
1 lb baby potatoes, quartered
4 tablespoons ghee (or butter for non-Whole30)
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
Salt and pepper to taste
2 tablespoons olive oil
Directions:
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the quartered potatoes, season with salt and pepper, and cook for 15-20 minutes, stirring occasionally until crispy and tender. Remove the potatoes from the skillet and set aside.
In the same skillet, add the ghee (or butter) and let it melt over medium-high heat. Add the minced garlic and cook for about 1 minute until fragrant.
Add the steak bites to the skillet in a single layer. Cook for 2-3 minutes on each side until the steak is browned and cooked to your desired doneness.
Return the potatoes to the skillet, add the chopped rosemary and thyme, and toss everything together to coat in the garlic butter.
Season with additional salt and pepper to taste, and serve immediately.
