🇮🇹 Bigoli in Salsa (Anchovy Onion Pasta)
A bold Venetian dish with thick pasta, anchovies, and slow-cooked onions.
Ingredients:
• 12 oz bigoli pasta
• 4 anchovy fillets
• 1 large onion, thinly sliced
• Olive oil
• Salt and pepper
Instructions:
1. Cook onion in olive oil until soft and golden.
2. Add anchovies and cook until melted into sauce.
3. Boil pasta and reserve some cooking water.
4. Toss pasta with sauce, adding pasta water to coat.
5. Season and serve.
