Beef Nachos with Cheese, Guacamole, and Pico de Gallo 🌮🧀
Ingredients:
For the Beef:

1 lb ground beef

1 small onion, chopped

1 packet taco seasoning mix

1/2 cup water (as per the seasoning packet)

Salt and pepper to taste

For the Nachos:

1 bag of tortilla chips (preferably plain or cheese-flavored)

1 cup shredded cheddar cheese (or a cheese blend)

1/2 cup sliced jalapeños (optional)

For the Pico de Gallo:

2 roma tomatoes, diced

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

Salt to taste

For the Guacamole:

2 ripe avocados

1 small lime, juiced

1/4 cup red onion, finely chopped

Salt and pepper to taste

1 tbsp fresh cilantro, chopped (optional)

Instructions:Step 1: Prepare the Beef

In a large skillet, heat a tablespoon of oil over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.

Drain any excess fat and add the taco seasoning and water. Stir and let it simmer for 5 minutes, until thickened. Set aside.

Step 2: Make the Pico de Gallo

In a medium bowl, combine diced tomatoes, chopped red onion, cilantro, lime juice, and salt.

Stir to combine, then set aside.

Step 3: Make the Guacamole

In a separate bowl, mash the avocados with a fork until smooth, leaving some chunks if you prefer.

Add lime juice, red onion, cilantro (if using), salt, and pepper. Mix until well combined.

Step 4: Assemble the Nachos

Preheat the oven to 375°F (190°C).

Spread a layer of tortilla chips on a baking sheet or oven-safe dish.

Spoon the cooked beef mixture over the chips, followed by a generous sprinkle of shredded cheddar cheese.

If desired, add a few slices of jalapeños.

Bake for 10-12 minutes, or until the cheese is melted and bubbly.

Step 5: Serve

Once the nachos are baked, remove them from the oven.

Top with a spoonful of pico de gallo and guacamole.

Optionally, drizzle with sour cream or extra cheese, and garnish with fresh cilantro.

Enjoy your Beef Nachos with Cheese, Guacamole, and Pico de Gallo! 🌮🧀🍴
