Easy Baked Keto-Friendly Pumpkin & Chia Seed Cracker Recipe ✨😋

Ingredients:
1 cup (130g) raw pumpkin seeds (pepitas)
1/2 cup (70g) sunflower seeds
1/4 cup (36g) chia seeds
1/4 cup (30g) ground flaxseed (flax meal)
2 tablespoons nutritional yeast (optional, for cheesy flavor)
1 teaspoon dried herbs (like rosemary, thyme, or Italian blend)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon fine sea salt
1 cup (240ml) water

Directions:
1. Preheat oven to 300°F (150°C). Line a large baking sheet with parchment paper.
2. In a large bowl, combine the pumpkin seeds, sunflower seeds, chia seeds, ground flaxseed, nutritional yeast (if using), dried herbs, garlic powder, onion powder, and salt. Stir well to mix the dry ingredients.
3. Pour the water over the seed mixture and stir until everything is thoroughly combined and moistened.
4. Let the mixture sit for 10-15 minutes. The chia seeds and flax meal will absorb water and create a gel-like consistency, binding the seeds together.
5. Pour the thickened seed mixture onto the parchment-lined baking sheet. Spread it out as thinly and evenly as possible using an offset spatula or the back of a spoon. Aim for about 1/8 inch (3 mm) thickness or less for maximum crispiness.
6. Bake for 30 minutes. Remove the baking sheet from the oven. Using a pizza cutter or sharp knife, carefully score the partially baked sheet into cracker shapes (squares or rectangles).
7. Return the baking sheet to the oven and continue baking for another 30-40 minutes, or until the crackers are dry, firm, and lightly golden around the edges. Keep a close eye towards the end to prevent burning. The center might take longer than the edges.
8. Turn off the oven and leave the crackers inside with the door slightly ajar for another 15-20 minutes to help them crisp up further as they cool.
9. Remove from the oven and let cool completely on the baking sheet before breaking them apart along the score lines.
10. Store in an airtight container at room temperature for up to 2 weeks.
