Chicken Bacon Ranch Potato Bake
Ingredients:
2 lbs baby potatoes, quartered
1 lb boneless skinless chicken breast, cubed
1 packet ranch seasoning mix
1 1/2 cups shredded cheddar cheese
6 slices bacon, cooked and crumbled
2 tbsp olive oil
Salt and black pepper to taste
1/2 tsp garlic powder
1/2 tsp smoked paprika
2 tbsp chopped green onions (optional garnish)
Ranch dressing (for drizzling, optional)
Directions:
Preheat your oven to 400°F (200°C).
In a large mixing bowl, toss the quartered potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them out evenly in a 9x13 baking dish.
Roast the potatoes in the oven for 25–30 minutes until slightly crispy and golden brown.
Meanwhile, season the cubed chicken with half of the ranch seasoning mix.
After the potatoes have roasted, remove from the oven, toss them, and layer the seasoned chicken on top.
Sprinkle crumbled bacon and shredded cheddar cheese evenly over the top.
Return the dish to the oven and bake for another 20–25 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
Optionally drizzle with ranch dressing and garnish with chopped green onions before serving.
