Chilled Cucumber Tomato Salad
Ingredients:
For the Salad:
2 large cucumbers, peeled and thinly sliced
3 medium tomatoes, chopped
1 red onion, thinly sliced
1/4 cup fresh basil leaves, chopped
1/4 cup fresh parsley leaves, chopped
For the Dressing:
1/4 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions:
Prepare the Salad:
In a large bowl, combine sliced cucumbers, chopped tomatoes, sliced red onion, chopped basil, and parsley.
Mix the Dressing:
In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, salt, and black pepper until well combined.
Combine and Chill:
Pour the dressing over the salad and toss gently to coat all the vegetables evenly.
Cover and refrigerate for at least 2 hours to allow flavors to blend and the salad to chill thoroughly.
Serve:
Stir the salad well before serving. Adjust seasoning with extra salt and pepper if needed.
